Here’s an easy recipe for crockpot chili – made it for lunch today with a houseful of kids – spring break and the T’s is apparently the hot spot!
2 lbs ground beef, browned and drained

1 can pinto beans, rinsed and drained
1 can cannelini beans, rinsed and drained
1 can red kidney beans, rinsed and drained

1 28oz can crushed tomato
1 14oz can tomato sauce
2 cups diced green bell pepper (I used frozen)

2 cups diced onion
3 T. chili powder
1 T. sliced jalapenos
salt to taste
- Put all ingredients in crockpot, stir.
- Cook on high for 4-5 hours or low 6-7 hours
- ENJOY!

Thank you tons for this easy-sounding recipe. I’m going to try it, perhaps over the weekend when we can enjoy the simmering smell of it. How about some cornbread muffins with it?

It must be a weird twin thing, I also made chili yesterday. Mine was not quite so easy and I had to rush the cooking with a pressure cooker but it was good anyway. Cold damp weather + pulled back = Beer Chili and cold fried chicken…MMMmmmm

Yikes! How did you hurt your back? But I must admit the chili sounds good.

I will have to give you the recipe book our next trip up. I got them as samples from a printing complaint in Dallas, it has like 200 local chili recipies.
As for the back thing who the hell knows, ask my twin. Could have been the wallet in the wrong pocket, a sneeze, wrong shoes…ect. What isn’t helping is toilet installs in a three floor walk up, dishwasher installs, or roofing jobs. I am keeping Advil and Mescal in business however…RIP my liver/kidneys.
